Turkey Meat Loaf

I’ve been prompted to share some new recipes I’ve made recently. Changing my eating habits since January 1, has caused me to learn a different way to cook with lots of new recipes.

One is Turkey Meat Loaf. In it, we’ve found our new favorite meat loaf!

Not only is it delicious, it’s healthy too.

I originally found this recipe from Taste of Home, but I adapted it a bit by using rolled oats instead of bread crumbs to make it even a little more healthy. The original recipe had butter melted over the top, but I chose to leave it off. The spinach adds flavor and more healthy benefits, as well.

It was a hit with my family!

Turkey Meat Loaf

 

Turkey Meat Loaf

1 medium onion, finely chopped
1 tablespoon canola oil
2 eggs
1/2 cup 2% milk
2 teaspoon lemon juice
1 teaspoon salt
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon pepper
2 cups soft whole wheat bread crumbs (about 5 slices) I used 2-1/2 cups chopped rolled oats instead of bread crumbs.
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2-1/2 pounds lean ground turkey
1/2 cup salsa

1. In a skillet, saute onion in oil until tender; set aside. In a bowl, combine the eggs, milk, lemon juice, salt, basil, oregano and pepper.Add the bread crumbs (or oats), spinach and reserved onion; stir to combine. Crumble turkey over mixture and mix until blended.

2. Shape into a 12-in. x 5-in. loaf; place in a 13-in. x 9-in. x 2-in. baking dish coated with nonstick cooking spray. Spread salsa over top.

3. Bake uncovered, at 350º oven for 1 hour, or until meat thermometer inserted near center reads 160º . Remove from oven and let sit for 10 minutes.

    Julie, I have tried turkey meatloaf before and wasn’t a fan. But your recipe has grabbed with two of your ingredients which are favorites of mine – spinach and salsa. I am definitely trying this one so thank you for sharing it!

    Julie, this looks fantastic! Right now, we’re on a “some days vegan, some days vegetarian” diet until Easter. (Thanks to my daughter!) But I’m going to pin this recipe and try it after Easter. My husband does not like beef meatloaf, but I bet he would love this! Anything with spinach and salsa has to be good! Thanks!
