Plans changed in our home this morning as we woke up to approximately six inches of fresh snow! Living in a rural area makes life quite interesting when there’s fresh blanket of snow on the ground. Combine the fresh snow with a little wind, and we are home bound, or at least we should be. I played it safe this morning, thanks to Bill’s urging, and the three-foot high drift in front of our garage, and stayed home from worship band practice because of the road conditions. I also had errands to run this morning, which will have to wait until later today. I’m hopeful to still be able to finish all I need to, and be able to get to our niece’s four year old birthday party later this afternoon!
In the meantime, it’s a perfect opportunity to make Chicken Enchilada soup for lunch! I haven’t made this soup for a very long time, and have missed it! It ranks third in my list of favorite soups…closely behind my brother Pat’s Chicken Noodle Soup and my Spinach Tortellini Soup. I’m getting hungry just thinking about it! 🙂
I also want to report (this helps me stay accountable) that in my first “real” week of 2009, I’ve kept my “Be Healthy” focus a priority. Since a week ago today, I’ve worked out every day except for Thursday this week. I haven’t gotten my workout in yet today, but plan to this afternoon. It feels good to have my muscles ache…just a little. 🙂 I was discussing this with my friend Jeanie, who also began her exercise regimen this week. We both agree that in just a week, we’ve noticed we have more energy, are sleeping better at night, and have a better attitude about everything in general! That feels great! Knowing Jeanie is working out daily helps me to do it too, even when I don’t feel like it! (And there have been a few days of that!)
I’m back to taking my vitamins daily, and have eaten more balanced meals. I’ve made a healthy (and also tasty) dinner every night for my family this week, and have enjoyed getting back on track with that. Ever since the kids were little, I’ve felt very strong about all of us eating dinner together around our kitchen table. It’s the only time, on many days, that all four of us are together, at the same time where we can connect with each other. I’ve made out a meal plan for our evenings, which has helped me not have that panicked “what are we going to have for dinner” feeling driving home from school each day. I’ll pass on some recipes every now and then. Below is the Chicken Enchilada Soup recipe. Enjoy!
Chicken Enchilada Soup
1 can (11 oz.) condensed fiesta nacho cheese soup, undiluted
1 can (10-3/4 oz.) condensed cream of chicken soup, undiluted
2-2/3 cups milk
1 can (10 oz.) chunk white chicken, drained
1 can (10 oz.) enchilada sauce (I use the green sauce)
1 can (4 oz.) chopped green chilies
1 can diced tomatoes
sour cream for garnish
In large saucepan, combine all ingredients and mix well. Cook until heated through. Garnish on top with sour cream.
I usually double this recipe and freeze the extra for a later meal. I have also made it in the crock pot and kept it on low until mealtime.
