Slow Cooker Salsa Chicken

This recipe is so easy! You could spice it up and add whatever you wanted according to your taste. I only had one jar of salsa, so I added a can of diced tomatoes, cumin, garlic, onions and some taco seasoning. I’d like to make it into a soup sometime by adding chicken broth and some cheese.

Slow Cooker Salsa Chicken
4 boneless/skinless chicken breasts
32 oz. salsa
1 (14.5 oz.) can of whole kernel corn, drained
1 (14.5 oz.) can of black beans, drained
Combine above in slow cooker.

 

Cook on low for 6-8 hours.
30 minutes prior to serving, remove chicken, shred and return to slow cooker.
Use chicken as filling inside tortillas, tacos, on top of a lettuce salad, or on top of rice.
Add desired condiments such as sour cream, guacamole, lettuce, cheese, etc.
