Cheeseburger Soup

This week I made for dinner one of my family’s favorite meals…Cheeseburger Soup.  I received this recipe from my friend Jeanie awhile ago, and we tend to make it often…especially if my children have anything to say about it! They love it! It’s quick and easy, and is a hearty meal!  Here’s the recipe…you can make it as healthy or as unhealthy as you’d like!

Keep in mind, I always double the recipe for our family of four. We love leftovers of this soup! We usually skip the bacon.

Cheeseburger Soup

1-1/2 cups water
2 cups potatoes (peeled, cubed)
2 small carrots (sliced or cubed)
1 small chopped onion
1 T. beef bouillon
1/2 t. salt

1 lb. ground beef or turkey (cooked, drained)
2-1/2 cups milk (divided)
3 T. flour
8 oz. Velveeta (I used 1/2 of this amount)
1/2 lb. bacon (cooked, crumbled) -optional

Combine first 6 ingredients and cook until tender. Stir in ground beef and 2 cups milk.  Combine flour and remaining milk and stir until smooth, then stir into soup. Cook 2 minutes. Add cheese, heat until melted.  Top with crumbled bacon.
