My “Famous” Spinach Artichoke Dip

Spinach and artichokes.

Mix them with the goodness cheese, sour cream, and cream cheese, and a few other goodies, and I’m all over it. This Spinach Artichoke Dip is amazingly delicious, and as a bonus, it’s simple to make. It’s a favorite in our home and at family get-togethers, so much so, it’s nearly famous!

Rarely are there leftovers, but if there are, this dip re-heats well and is just as delicious. Try it for yourself and see what you think.

My “Famous” Spinach Artichoke Dip

 

2 cups Parmesan cheese (or Italian blend shredded cheese)
1 box frozen spinach, thawed & drained
1 (14 oz.) can artichoke hearts, drained (I chop them smaller)
2/3 cup sour cream
1 cup cream cheese
1/3 cup mayonnaise
2 teaspoons garlic, minced

1. Mix together Parmesan cheese, spinach, and artichoke hearts.
2. Combine remaining ingredients and mix with spinach mixture. Bake at 375 F for 20-30 minutes.
3. Serve with crackers, toasted bread or tortilla chips.

May substitute low-fat versions of cream cheese, mayonnaise and sour cream.
May also top with additional shredded cheese if desired.
